In Hebrew, the term liftoach shulchan means “to open the table” — it refers to an abundance of delicious appetizers that generously welcome guests to a meal. 

Countless cultures have terms for similar small bites. Across much of the Eastern Mediterranean, dishes like stuffed grape leaves, olives, and fried kibbeh are known as mezze. In the Syrian Jewish community, a spread including sambusak and lahmajun that’s served at a Shabbat meal or a celebration is called mazzah. And, in Tunisian Jewish homes, the term for starters is kemia.  

These are some of our favorite dishes to eat — often best enjoyed by dipping bread into them or picking them up with your fingers and popping them straight into your mouth.
