Our Favorite Matzah Recipes for Passover — and Beyond

Anyone who has ever purchased a box of matzah (also spelled matzo) for Passover has met the same fate: leftover boards, sometimes boxes and boxes of them. The recipes in this collection are some of our favorites for making the most of them. There’s author Michael Twitty’s matzo balls in a sauce inspired by West African yassa chicken, matzo crusted fried chicken, Alison Roman’s matzo brei, and mina, a Sephardi dish where matzo is stacked with meat or vegetables. Almost all are kosher for Passover, but the salty key lime pie and homemade matzah are best saved for the other 51 weeks of the year.
Note: If you need more matzah meal, you can make it easily by breaking sheets of matzah into smaller chunks and pulsing them in a food processor until you reach a fine crumb consistency.
