For five years, our partners at Asif: Culinary Institute of Israel welcomed guests to their culinary library, rooftop farm, gallery, and cafe in Tel Aviv. Asif’s mission was to research and nurture Israel’s diverse and evolving food culture.

Through workshops, research projects, and pop-ups, Asif documented recipes from Israeli families, many of which you can find in this collection. There’s the Tunisian fricassé filled with tuna from Matan Choufan and his mother Brigette, Ethiopian recipes from chef Elazar Tomano, and the meatball sandwiches Shirly Nishri’s grandmother made.  

Asif closed its doors in the spring of 2026, though Cafe Asif remains open
