Preparation

Step 1

Prepare the chow (spice paste): In a medium bowl, mix all the spices with the water to form a paste and set aside.

Step 2

Drain and rinse the soaked lentils until the water runs clear.

Step 3

In a medium pot over medium-low heat, add the onion and sauté without oil for 2–3 minutes, until it begins to release its moisture.

Step 4

Add 3 tablespoons of olive oil and continue to sauté over medium heat for another 5–7 minutes, until golden.

Step 5

Add 3 teaspoons of chow and sauté over medium-low heat for 5–7 minutes, stirring occasionally, until fragrant.

Step 6

Add the rinsed lentils and salt, then pour in enough water to just cover them.

Step 7

Cook uncovered over medium heat for 15–20 minutes, stirring occasionally, until the lentils are cooked through.

Step 8

Add the minced garlic and green chili (if using) and continue cooking for another 15 minutes, stirring occasionally. If the stew becomes too thick, add a little more water to loosen it.

Step 9

Taste and adjust salt if needed. Serve hot with injera.
