Ingredients
For the dough:
- 2 ½ cups fine bulgur (#1)*
- 1 cup chickpea flour
- 1 cup semolina flour
- 1 cup whole grain breadcrumbs
- 2 tablespoons olive oil
- 1 tablespoon tomato paste
- 1 tablespoon salt
Most bulgur that is available in regular supermarkets is #4. What you need for kubbeh is #1. A specialty food store like Kalustyan’s should be able to point you in the right direction. Just let them know that you are looking for the finest grain of bulgur for making kubbeh. TODO(tenere?)
For the filling:
- 2 pounds ground beef, highest fat content available - 80/20
- 2 ounces ground lamb fat (optional)*
- 3 teaspoons Jerusalem spice blend
- 2 teaspoons ground coriander
- 1 ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup neutral oil (like canola, sunflower or grapeseed)
- 4 large onions, finely chopped
