  • 6 cucumbers, cut into thin rounds
  • Juice of 1 lemon
  • 2 teaspoons kosher salt
  • ¼ teaspoon ground black pepper
  • ½ cup mint leaves, chopped

    Mix the cucumbers, lemon juice, salt, pepper and mint in a bowl to combine.
