Herby and Tangy Recipes from Persian Jewish Families

Sit down to a Persian Jewish table and you’re likely to be met with an abundance of herbs, rich stews with tangy flavors, plates of perfectly cooked rice — and an almost overwhelming sense of hospitality.
Dating back to the 4th century BCE, the Persian Jewish community is one of the oldest in the Diaspora, Claudia Roden explains in “The Book of Jewish Food: An Odyssey from Samarkand to New York.” In ancient and Medieval times, they worked as merchants, part of a network of traders that connected the west with China and India. And, throughout the centuries, they experienced periods of persecution and acceptance. For much of the 20th century during the Pahlavi dynasty, Jews were integrated into Iranian society and many flourished.
But, when the Iranian Revolution began in 1978, much of the country’s Jewish community fled. Nilou Ghalchi, who shared her family’s Shabbat recipes with us, explains: “We had to leave overnight without saying bye to my friends, without letting them know that we're leaving.” Like many Iranian Jews including Tannaz Sassooni’s family, they thought they would return once the situation calmed, but most have never been back.
Today, estimates of the Jewish population in Iran range from about 9,000 to 25,000, but the majority of Iranian Jews have settled in Israel, Los Angeles, and on Long Island where they have maintained their culture through music, language, and food. Their cooking is a blend of Persian dishes like the herby omelet kuku sabzi and tangy stew ghormeh sabzi, and those that are uniquely Jewish like chickpea dumplings called gondi that are served on Shabbat.
