Venetian charoset recipes often include chestnuts, along with other nuts like walnuts and pistachios, reflecting the city's history as a commercial port. This Venetian charoset incorporates rich chestnut paste, dried figs, and dates for a smooth, sweet base. The addition of almonds and poppy seeds adds texture, while the grated orange zest and juice lend a refreshing citrus note. In some Jewish communities, seeds are traditionally avoided during Passover. If you follow this custom, you can omit the poppy seeds or substitute additional chopped nuts for texture.

In a food processor, grind all ingredients except wine and honey into a thick paste.
Add a splash of wine and a small drizzle of honey to taste, then mix well.
